Michelin-recommended and chef Jeffrey Vella’s focus is on vegetable-based dishes crafted from the finest local ingredients, paired with a carefully curated wine list.
The 20-course menu, which changes monthly and adapts to the microclimate, celebrates local, seasonal produce and the Istrian culinary tradition. The restaurant works closely with dedicated local producers and fishermen, ensuring sustainability with dishes like local mackerel with kohlrabi leaves and wild carrots. For an immersive experience, guests can enjoy an open kitchen or chef’s table, where dishes are prepared right in front of them.
Tekka by Lone
In addition to sushi, sashimi, and nigiri, Tekka by Lone – an innovative Michelin-recommended restaurant – offers dishes that blend Istrian ingredients with Japanese culinary techniques. Here, fresh, seasonal Istrian produce meets Japanese preparation methods, achieved through close collaboration with local producers and fishermen.
Unique dishes include white fish and shellfish tartare, tuna and asparagus pattani, and nigiri with marinated sea urchin. The attractive setting, featuring a stylish interior and an organic garden terrace surrounded by lush lawns and pines, enhances the dining experience.
